intermediate cooking series
makes 1 quart
takes just a few minutes
2 egg yolks
2 tbs dijon mustard
10 anchovy fillets (I use anchovy paste)
4 oz lemon juice
1 cup shredded parm
1 tbs Worcestershire sauce
1/2 tsp black pepper
2 1/2-3 cups of canola oil
S&P
In a food processor blend together all ingredients except for oil. While processor is on, slowly drizzle in oil until dressing is thick. Season with salt to taste.
*use a whisk if you don't have a food processor

Dijon Vinaigrette

little over two cups of dressing
less than 5 minutes
1/2 c of muscato vinegar
1/4 c of honey
1/4 c whole grain Dijon mustard
1 shallot minced
1/4 tsp thyme leaves
1 1/2-2 cups of oil
S&P to taste
1. In large mixing bowl mix all ingredients except for oil.
2. Slowly whisk in oil until dressing is thick and emulsified.
3. Season to taste

White Balsamic Vinaigrette

1/2 c honey
1/2 c white balsamic vinegar

1.5 c extra virgin olive oil

2. while processor is spinning slowly add oil until emulsified
*this is my favorite dressing, almost fluffy white
*excellent with bib lettuce and thinly sliced apples or pears.

1 shallot minced
3 cloves of garlic minced
1tbs chopped parsley
1 1/2-2 c Extra virgin olive oil
S&P to taste
1. Mix all ingredients with a whip except for oil
2. Slowly drizzle in oil stirring consistently.
3. Season with S&P to taste
*this one has quite the bite to it

1 c chopped scallions (both white and green parts)
1 c chopped fresh basil leaves
1/4 c lemon juice
2 tsp chopped garlic
2 tsp anchovy paste

1 tsp pepper
1 c sour cream
place mayo, scallions, basil, lemon juice, anchovy paste, S&P in a blender and blend tell smooth. Add sour cream and process just until blended.
