Dijon Vinaigrette

intermediate cooking series
little over two cups of dressing
less than 5 minutes

1/2 c of muscato vinegar
1/4 c of honey
1/4 c whole grain Dijon mustard
1 shallot minced
1/4 tsp thyme leaves
1 1/2-2 cups of oil
S&P to taste

1. In large mixing bowl mix all ingredients except for oil.
2. Slowly whisk in oil until dressing is thick and emulsified.
3. Season to taste
