White Balsamic Vinaigrette

intermediate cooking series
under two cups
less than five minutes


1 shallot chopped
1/2 c honey
1/2 c white balsamic vinegar
1 egg yolk
1.5 c extra virgin olive oil
S&P to taste

1. In a food processor combine all ingredients except for oil
2. while processor is spinning slowly add oil until emulsified

*this is my favorite dressing, almost fluffy white
*excellent with bib lettuce and thinly sliced apples or pears.
