caesar

intermediate cooking series
makes 1 quart
takes just a few minutes


2 egg yolks
2 tbs dijon mustard
10 anchovy fillets (I use anchovy paste)
4 oz lemon juice
1 cup shredded parm
1 tbs Worcestershire sauce
1/2 tsp black pepper
2 1/2-3 cups of canola oil
S&P

In a food processor blend together all ingredients except for oil. While processor is on, slowly drizzle in oil until dressing is thick. Season with salt to taste.

*use a whisk if you don't have a food processor
