Description: This is a surprisingly fun dish to bring to a potluck. It's healthy, easy, and most importantly, tasty. I have also given this dish to new mom's and have always gotten positive feedback. If you've got spice haters, just alter the spices, chilies, and add more cheese. (that's what I do)
Ingredients
Large skillet
3 Tbsp oil
2 lbs ground chicken or turkey
1 bag taco seasoning
1/2 red onion
1 can black beans drained
1 can fire roasted tomatoes drained (any type of canned tomatoes can work)
1 can of kidney beans
1 can of corn
1 small can of chiles diced*
2 chipotles seeded and diced*
2 c shredded cheese (chipolte or mexican)
spinach or wheat tortillas cut in half
Directions:
1. Saute meat and onion in hot pan.
2. Stir in taco seasoning.
3. Add tomatoes, corn, beans, chiles.
4. Heat to a simmer and season with S&P to taste. Taste mixture and add chiles as wanted.
5. With a large casserole pan layer "lasagna" with: mixture, tortilla, cheese, and then repeat
6. Top with remaining cheese bake 425 for 15 min.
Tips and Tricks
You can add the can of chiles and the chipotles for more heat or omit/ reduce for a mild and kid friendly version.
Sometimes I make this in two 8x8 pans. I serve one with Mexican rice, salad, etc, and then freeze the other for a later date.
Any leftover filling is good with eggs or a breakfast burrito the next morning.
