Makes: a whole chicken with sauce
Description: This is another classic chicken dish I learned in cooking class (it was saute day) I say never mess with tasty and I didn't mess with this.This is a good dish if you're entertaining and unsure of the guests palate. I've never entertained someone who didn't clean the plate with this dish.
Inspiration

1 whole chicken cut into pieces or 3-4 lb legs and thighs
2 Tbsp oil
S&P
1 1/2 c chopped onion
2 cloves garlic chopped
1 c dry white wine
1 28oz can whole tomatoes with liquid
1 bay leaf
1 tsp fresh rosemary coarsely chopped
1 c chicken stock
1/4 Tbsp chopped parsley
1. Season chicken with S&P on all sides, brown chicken pieces, and remove chicken from the pan.
2. Pour off excess fat and saute onion until soft about 8 min. Add garlic and saute 1 min.
3. De-glaze with wine, add tomatoes, bay leaf, and rosemary.
4. Return chicken to pan and add stock, covering 2/3 of the chicken.
5. Cover and cook in the oven at 325 degrees for 45 min. or until chicken reaches an internal temperature of 165 degrees.
6. Stir in chopped parsley in the last 5 minutes.
Tips and Tricks
Serve over pasta or creamy polenta.
