Ingredients
1 lb flank steak, butterflied along the grain
S&P
6 oz asiago cheese shredded
4 oz spinach leaves, washed, patted dry
6oz feta cheese, crumbled
6 oz sun dried tomatoes, chopped
toothpicks or cooking twine
1. Spread flank steak out so that the grain is running left to right. 2. Combine the S&P, spinach, tomatoes, and cheeses in a bowl. Place the mixture on top of the flank steak.
3. Carefully roll the flank steak away from you forming a roll.
4. Secure the roll with toothpicks or cooking twine.
5. Grill pinwheels until desired doneness about 15-20 minutes at medium high heat.
Tips and Tricks
If concerned about doneness on the inside of the pinwheel, leave the pinwheel on the grill with the burner underneath turned off and leave another burner on to provide heat for a few extra minutes.
