Description: This has become our favorite chicken recipe. It's loaded with flavor and really pretty on the plate. The olives are a great compliment to this quick and easy chicken dish.
Ingredients
2 chicken breasts butterflied into 4 pieces
1 Tbsp oil
S&P flour
1/2 c diced onions
1/2 c chicken stock
1 can diced tomatoes
3 Tbsp chopped cilantro
1/2 tsp cumin
1/4 c shredded cheese and black olive slices
1. Dredge the chicken in the seasoned flour. Put in hot oiled saute pan until both sides are browned, remove chicken.
2. Using the same pan, add onions and saute until translucent.
3. Add chicken stock and tomatoes, making sure to deg-laze the pan. Be sure to scrape any brown bits from the bottom.
4. Stir in cumin and bring to a simmer.
5. Return chicken to pan and finish cooking.
6. When chicken is done, place on serving plate, add any sauce leftover in the cooking pan.
7. Garnish with cheese, cilantro, and olives.
Tips and Tricks
I use tomatoes with chilies for a little extra kick.
Serve over pasta or mashed potatoes with plenty of sauce.
Variations
Also yummy using pork chops instead of chicken.
