Chocolate Mousse

Inspiration: Beginning cooking series

Cook time: 10 minutes
Makes: 8 ramekins or martini glasses

Description: Fluffy and chocolaty....can't beat it. This homemade mousse is a little tricky at first. But once you make it once, you'll get the hang of it. I like this because I can make it before hand. Pop it in the fridge and then forget about it until it's time for dessert. Serve in coffee cups, martini glasses. Add whip cream, cookies, or berries to the presentation.



Ingredients
4 1/2 oz bittersweet chocolate finely chopped
2 Tbsp butter diced
1 cup cold cream
3 separated eggs
1 Tbsp sugar

1. Whip cream to soft peaks and refrigerate.
2. Whip egg whites until foamy, sprinkle in sugar and beat until soft peaks form.
3. Double boil over medium high heat, chocolate and butter until smooth. Remove from heat and let cool.
4. When chocolate has cooled  stir in egg yolks.
5. Stir in 1/3 whip cream, then 1/2 whites until barely incorporated. Finish adding the rest of the mixture.
6. Put in dishes and refrigerate for a minimum of 2 hours and up to 1 day.

Tips and Tricks
You should use high quality chocolate or this will not taste as it should.
